Ingredients
  

  • 1 medium zucchinis spiralized into noodles
  • 12 shrimp peeled and deveined
  • 2 tbsp olive oil divided
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes adjust to taste
  • 1 lemon zest and juice
  • Salt
  • pepper
  • 2 tbsp fresh parsley chopped
  • 1 tbsp Parmesan cheese grated

Instructions
 

  • Preparation of Zucchini Noodles: Start by washing your zucchinis. Using a spiralizer or a julienne peeler, turn the zucchinis into noodles. Place them in a colander and sprinkle a little salt over them. Let them sit for about 10 minutes to release excess water, then gently pat them dry with a paper towel.
  • Cooking the Shrimp: While the zucchini noodles are sitting, heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp, seasoning them with salt and pepper. Cook until the shrimp turn pink and are slightly golden, about 1-2 minutes on each side. Add half of the minced garlic during the last minute of cooking. Remove the shrimp from the skillet and set aside.
  • Sautéing the Noodles: In the same skillet, add the remaining olive oil, the rest of the garlic, and red pepper flakes. Sauté for a minute until fragrant. Add the zucchini noodles, tossing them for about 2 minutes until just tender. Be careful not to overcook them to avoid them turning mushy.
  • Combining Ingredients: Return the shrimp to the skillet with the zucchini noodles. Add lemon zest and lemon juice, tossing everything together for about a minute. Adjust seasoning with salt and pepper as needed.
  • Serving: Divide the zucchini noodles and garlic shrimp between two plates. Garnish with fresh parsley and a sprinkle of grated Parmesan cheese, if desired.
