Ingredients
  

  • 1 cup dried green or brown lentils rinsed
  • 2 potatoes peeled and cubed
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1/2 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/2 cup vegetable broth
  • salt
  • pepper
  • 1/4 cup non-dairy milk for vegan option
  • 2 tbsp vegan butter or regular butter

Instructions
 

  • Preheat Oven and Prepare Lentils: Preheat your oven to 375°F (190°C). Cook the lentils in a pot of boiling water for 20-25 minutes until tender, then drain.
  • Cook the Potatoes: In a medium pot, boil the cubed potatoes until tender, about 15 minutes. Drain and mash with non-dairy or regular milk and butter. Season with salt and pepper to taste.
  • Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add onions, garlic, and carrots, cooking until softened. Stir in the cooked lentils, frozen peas, tomato paste, thyme, smoked paprika, and vegetable broth. Simmer for about 5 minutes. Season with salt and pepper.
  • Assemble the Pie: In a baking dish, spread the lentil mixture evenly. Top with the mashed potatoes, smoothing out the top.
  • Bake the Pie: Bake in the preheated oven for 20 minutes or until the top is golden and the edges are bubbling.
  • Serve: Let the pie cool for a few minutes before serving.
