Ingredients
  

  • 1 pie crust homemade or store-bought
  • 2 cups fresh spinach washed and roughly chopped
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 1/2 cup feta cheese crumbled
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 tsp nutmeg
  • salt to taste
  • pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a frying pan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  • Add the spinach to the pan and cook until wilted, then set aside.
  • In a mixing bowl, whisk together eggs, heavy cream, nutmeg, salt, and pepper until well combined.
  • Roll out your pie crust and line the tart pan with it, pressing down the edges to shape it to the pan.
  • Spread the sautéed spinach mixture evenly over the pie crust.
  • Sprinkle the crumbled feta cheese on top of the spinach.
  • Pour the egg mixture over the spinach and feta, ensuring an even distribution of the liquid.
  • Place the tart pan in the preheated oven and bake for 35-40 minutes, or until the center is set and the crust is golden brown.
  • Remove the quiche from the oven and allow it to cool for 10-15 minutes before slicing.
