Ingredients
  

  • 1 cup Sushi Rice
  • 2 cups Water
  • 1 tablespoon Rice Vinegar
  • Salt To Taste
  • 1 Ripe Avocado Thinly Sliced
  • 1 Cucumber Julienned
  • 1 Carrot Julienned
  • 1 Small Red Bell Pepper Thinly Sliced
  • 1/2 cup Edamame Beans
  • 2 sheets Nori Seaweed Cut into Strips
  • 2 tablespoons Sesame Seeds
  • 1/4 cup Vegan Mayo
  • 1 tablespoon Sriracha Adjust to taste
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Soy Sauce

Instructions
 

  • Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions.
  • Once the rice is cooked, let it cool slightly. Stir in the rice vinegar and a pinch of salt. Set aside.
  • Meanwhile, prepare the spicy mayo by whisking together vegan mayo, sriracha, sesame oil, and soy sauce in a small bowl.
  • To assemble the bowls, divide the sushi rice between two bowls. Top with avocado, cucumber, carrot, bell pepper, edamame beans, and nori strips.
  • Drizzle the spicy mayo over the top of each bowl. Sprinkle with sesame seeds.
  • Serve immediately and enjoy this vibrant, flavorful dish with your partner.
