- 2 cups Water
- 1 tablespoon Rice Vinegar
- Salt To Taste
- 1 Ripe Avocado Thinly Sliced
- 1 Cucumber Julienned
- 1 Carrot Julienned
- 1 Small Red Bell Pepper Thinly Sliced
- 1/2 cup Edamame Beans
- 2 sheets Nori Seaweed Cut into Strips
- 2 tablespoons Sesame Seeds
- 1/4 cup Vegan Mayo
- 1 tablespoon Sriracha Adjust to taste
- 1 teaspoon Sesame Oil
- 1 teaspoon Soy Sauce
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions.
Once the rice is cooked, let it cool slightly. Stir in the rice vinegar and a pinch of salt. Set aside.
Meanwhile, prepare the spicy mayo by whisking together vegan mayo, sriracha, sesame oil, and soy sauce in a small bowl.
To assemble the bowls, divide the sushi rice between two bowls. Top with avocado, cucumber, carrot, bell pepper, edamame beans, and nori strips.
Drizzle the spicy mayo over the top of each bowl. Sprinkle with sesame seeds.
