- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 tsp ground cumin

- 1/2 tsp ground cinnamon

- 2 tbsp olive oil
- 1 cup beef or lamb broth
- 1 medium carrot sliced
- 1 cup chickpeas drained and rinsed
- 4 dried apricots sliced
- Salt
- Pepper
- Fresh cilantro or parsley for garnish
- Toasted almonds for garnish
Marinating the Lamb: In a bowl, mix lamb chunks with cumin, coriander, cinnamon, saffron, salt, and pepper. Let it marinate for at least 30 minutes.
