  • 2 tbsp green curry paste
  • 1 cup coconut milk
  • 1/2 cup chicken broth
  • 1 zucchini sliced
  • 1/2 red bell pepper thinly sliced
  • 1 carrot julienned
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tbsp lime juice
  • Handful of Thai basil leaves
  • Steamed jasmine rice for serving

Instructions
 

  • Prepare Ingredients: Start by slicing the chicken breast, zucchini, red bell pepper, and carrot. Set aside.
  • Cook Chicken: Heat the vegetable oil in a medium saucepan or wok over medium heat. Add the chicken slices and cook until they are lightly browned and cooked through. Remove the chicken and set it aside.
  • Make Curry Base: In the same pan, add the green curry paste and cook for a minute until fragrant. Pour in the coconut milk and chicken broth, stirring well to combine with the curry paste.
  • Add Vegetables: Add the sliced zucchini, bell pepper, and carrot to the saucepan. Simmer for about 10 minutes until the vegetables are tender.
  • Combine with Chicken: Return the cooked chicken to the saucepan. Stir in fish sauce, sugar, and lime juice. Let the curry simmer for another 5 minutes.
  • Final Touches: Just before serving, stir in a handful of Thai basil leaves for added flavor.
  • Serve: Serve the Thai Green Curry hot, accompanied by steamed jasmine rice.
