Sundried Tomato and Basil Pasta

- 200 g spaghetti or linguine
- 1/3 cup sundried tomatoes chopped
- 2 garlic cloves minced
- 1/4 cup fresh basil leaves chopped
- 1 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- salt
- pepper
- Red pepper flakes optional
- 1/4 cup reserved pasta water
Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Stir in the chopped sundried tomatoes, cooking for an additional 2-3 minutes.
Once the pasta is done, reserve 1/4 cup of pasta water, then drain the remaining water.
Add the pasta to the skillet with the garlic and sundried tomatoes. Toss to combine.
If the pasta seems dry, add the reserved pasta water a tablespoon at a time until the desired consistency is reached.
Stir in the fresh basil, grated Parmesan cheese, salt, pepper, and red pepper flakes (if using). Toss until well combined.
Serve immediately with extra Parmesan cheese on top and perhaps a glass of your favorite wine. Buon appetito!
