- 2 large bell peppers any color
- 1/2 lb ground turkey
- 1 cup brown rice cooked
- 1 small onion diced
- 2 cloved garlic minced
- 1/2 cup tomatoes diced
- 1/2 cup cheddar cheese shredded
- 1 tbsp olive oil
- salt to taste
- pepper to taste
- 1 tsp dried oregano
- 1/4 tsp crushed pepper flakes optional
Preheat your oven to 375°F (190°C).
Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
In a skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until soft and fragrant.
Add the ground turkey to the skillet. Season with salt, pepper, oregano, and red pepper flakes (if using). Cook until the turkey is browned.
Stir in the cooked brown rice and diced tomatoes. Remove from heat.
Spoon the turkey and rice mixture into the hollowed-out bell peppers.
Sprinkle the tops of the stuffed peppers with shredded cheddar cheese.
Cover the baking dish with aluminum foil and bake for 35-40 minutes.
Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
