Stuffed Bell Peppers with Ground Turkey and Brown

Ingredients
  

  • 2 large bell peppers any color
  • 1/2 lb ground turkey
  • 1 cup brown rice cooked
  • 1 small onion diced
  • 2 cloved garlic minced
  • 1/2 cup tomatoes diced
  • 1/2 cup cheddar cheese shredded
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste
  • 1 tsp dried oregano
  • 1/4 tsp crushed pepper flakes optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until soft and fragrant.
  • Add the ground turkey to the skillet. Season with salt, pepper, oregano, and red pepper flakes (if using). Cook until the turkey is browned.
  • Stir in the cooked brown rice and diced tomatoes. Remove from heat.
  • Spoon the turkey and rice mixture into the hollowed-out bell peppers.
  • Sprinkle the tops of the stuffed peppers with shredded cheddar cheese.
  • Cover the baking dish with aluminum foil and bake for 35-40 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  • Let the stuffed peppers rest for a few minutes before serving. Enjoy your romantic meal!
