- 1 cup quinoa rinsed
- 2 cup water
- 2 skinless chicken breasts boneless
- Salt
- pepper
- 1 tbsp olive oil
- 2 cup fresh spinach leaves
- 1 red onion finely chopped
- 1 clove garlic minced
- 1 lemon juiced
- 2 tbsp feta cheese crumbled
- 1 tbsp fresh parsley chopped
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium heat. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Let it rest for a few minutes, then slice.
In the same skillet, add the red onion and garlic. Sauté for 2-3 minutes until softened.
Add spinach to the skillet and cook until just wilted.
Fluff the cooked quinoa with a fork and divide it into two bowls.
Top quinoa with the sautéed spinach mixture, sliced chicken, a squeeze of lemon juice, crumbled feta, and fresh parsley.
