  • 2 cups cooked jasmine rice chilled
  • 1 cup fresh pineapple diced
  • 1 medium red bell pepper diced
  • 1 medium onion diced
  • 2 green onions sliced
  • 1 small carrot shredded
  • 2 cloves garlic minced
  • 1-2 red chili peppers minced (adjust to taste)
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp vegetabe oil
  • Salt To Taste
  • Fresh cilantro and lime wedges For garnish (Optional)

Instructions
 

  • Prep the Ingredients: Dice the pineapple, bell pepper, onions, and chili peppers. Mince the garlic and shred the carrot.
  • Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Sauté Vegetables: Add the onion, bell pepper, carrot, and chili peppers. Cook until softened, about 3-4 minutes.
  • Add Garlic and Pineapple: Stir in the garlic and pineapple. Cook for another 2 minutes until fragrant.
  • Add Rice: Break up the chilled rice and add it to the skillet. Toss well to combine.
  • Season: Pour the soy sauce over the rice and mix well. Cook for 2-3 minutes until the rice is heated through and takes on a golden color. Adjust salt to taste.
  • Garnish: Top with sliced green onions, fresh cilantro, and lime wedges if desired.
  • Serve: Divide the fried rice between two plates and enjoy a tropical feast with your loved one!
