- 1 Small Onion Chopped
- 1 Bell Pepper Chopped
- 2 cloves Garlic Minced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/4 teaspoon Cayenne Pepper Optional
- 14 oz Diced Tomatoes
- Salt To Taste
- Pepper To Taste
- 4 Eggs
- 2 tablespoons Fresh Parsley Chopped
- 2 Slices Crusty Bread To Serve
Heat the olive oil in the skillet over medium heat. Add the onion and bell pepper, sautéing until they begin to soften.
Add the garlic, cumin, paprika, and cayenne pepper (if using), and stir for another minute until the spices are fragrant.
Pour in the diced tomatoes with their juice, then season with salt and pepper. Let the mixture simmer for about 15 minutes until it thickens slightly.
Make four wells in the tomato mixture with your spatula. Crack an egg into each well, then cover the skillet and let it cook for another 5-7 minutes, or until the eggs are cooked to your liking.
Sprinkle the shakshuka with fresh parsley, then serve directly from the skillet with slices of crusty bread on the side for dipping.
