Ingredients
  

  • 1 tablespoon Olive Oil
  • 1 Small Onion Chopped
  • 1 Bell Pepper Chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper Optional
  • 14 oz Diced Tomatoes
  • Salt To Taste
  • Pepper To Taste
  • 4 Eggs
  • 2 tablespoons Fresh Parsley Chopped
  • 2 Slices Crusty Bread To Serve

Instructions
 

  • Heat the olive oil in the skillet over medium heat. Add the onion and bell pepper, sautéing until they begin to soften.
  • Add the garlic, cumin, paprika, and cayenne pepper (if using), and stir for another minute until the spices are fragrant.
  • Pour in the diced tomatoes with their juice, then season with salt and pepper. Let the mixture simmer for about 15 minutes until it thickens slightly.
  • Make four wells in the tomato mixture with your spatula. Crack an egg into each well, then cover the skillet and let it cook for another 5-7 minutes, or until the eggs are cooked to your liking.
  • Sprinkle the shakshuka with fresh parsley, then serve directly from the skillet with slices of crusty bread on the side for dipping.
