- 200 g beef sirloin thinly sliced

- 100 g spinach blanched
- 100 g shiitake mushrooms sliced

- 2 tbsp soy sauce
- 1 tbsp sesame oil plus extra for vegetables
- 2 cloves garlic minced
- 2 tbsp gochujang Korean chili paste
- 1 tsp sugar
- 1 tbsp vegetable oil for cooking

Cook the Rice:Rinse 1 cup of rice until the water runs clear. Combine the rice and 2 cups of water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and reduce to a simmer for 18-20 minutes, or until the water is absorbed. Let it sit covered for 5 minutes.
Prepare the Beef:In a bowl, mix the beef with 1 tablespoon soy sauce, 1 tablespoon sesame oil, and minced garlic. Let it marinate for at least 15 minutes.
Sauté the Vegetables:Heat a splash of sesame oil in a skillet over medium heat. Sauté the carrot, zucchini, and mushrooms individually until just tender but still crisp, seasoning with a little salt. Set aside in separate bowls.
Blanch the Spinach:Blanch the spinach in boiling water for 30 seconds, then plunge into cold water. Squeeze out excess water, then season with a little soy sauce and sesame oil.
