Ingredients
  

  • 150 g pasta like fettuccine or penne
  • 1 zucchini sliced
  • 1 red bell pepper cut into strips
  • 1 yellow squash sliced
  • 1/2 red onion sliced
  • 10 cherry tomatoes halved
  • 2 cloves of garlic minced
  • 3 tbsp olive oil
  • 1/2 tsp dried Italian herbs
  • Salt
  • pepper
  • 1/4 cup Parmesan cheese grated
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the Oven and Prepare Vegetables: Preheat your oven to 400°F (200°C). Toss the zucchini, bell pepper, yellow squash, red onion, and cherry tomatoes with 2 tablespoons of olive oil, minced garlic, Italian herbs, salt, and pepper. Spread them out on a roasting pan or baking sheet.
  • Roast the Vegetables: Place the tray in the oven and roast for about 20 minutes, or until the vegetables are tender and slightly caramelized.
  • Cook the Pasta: While the vegetables are roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Combine Pasta and Vegetables: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the roasted vegetables and cooked pasta, tossing gently to combine.
  • Final Touches: Sprinkle the grated Parmesan cheese over the pasta and vegetables. Toss again until the pasta is well coated.
  • Serve: Divide the pasta between two plates. Garnish with fresh basil leaves. Serve hot and enjoy your romantic meal!
