Ingredients
  

  • 1 cup Graham Cracker crumbs
  • 4 tablespoons Unsalted Butter Melted
  • 1 cup White Chocolate Chips
  • 1/2 cup Heavy Cream
  • 1 cup Cream Cheese At room temperature
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Large Eggs At room temperature
  • 1 cup Fresh Raspberries
  • 1/4 cup Raspberry Jam

Instructions
 

  • Preheat your oven to 325°F (165°C). Grease your springform pan and set aside.
  • In a bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of the prepared pan to form the crust.
  • In a saucepan over low heat, melt the white chocolate chips with the heavy cream, stirring until smooth. Remove from heat and let it cool slightly.
  • In a large bowl, beat the cream cheese until smooth. Gradually add the sugar, beating until well combined.
  • Stir in the melted white chocolate mixture and vanilla extract into the cream cheese mixture.
  • Add the eggs, one at a time, beating well after each addition.
  • Pour half of the cream cheese mixture over the crust in the pan. Dollop half of the raspberry jam over the cream cheese layer, then add half of the fresh raspberries.
  • Pour over the rest of the cream cheese mixture, and repeat with the remaining raspberry jam and fresh raspberries.
  • Bake for 50-60 minutes or until the center is set and the top is lightly browned. Let it cool in the pan on a wire rack.
  • Once cooled, refrigerate for at least 4 hours, or overnight, before serving.
