  • 2 duck breasts skin on

  • 1 cup pomegranate juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 garlic clove minced
  • 1/2 tsp ground ginger
  • Pomegranate seeds for garnish
  • Fresh herbs for garnish

Instructions
 

  • Preheat the Oven: Begin by preheating your oven to 375°F (190°C).
  • Prepare the Duck: Score the skin of the duck breasts in a crosshatch pattern, ensuring not to cut into the meat. Season both sides with salt and pepper.
  • Sear the Duck: Place the duck breasts, skin side down, in a cold roasting pan. Turn the heat to medium and cook until the skin is golden and crisp, about 6-8 minutes. Then, flip the duck breasts and cook for another 2 minutes on the other side.
  • Bake: Transfer the roasting pan to the oven and roast the duck for about 15 minutes for medium-rare, or until your desired doneness.
  • Make the Glaze: While the duck is roasting, combine pomegranate juice, honey, soy sauce, minced garlic, and ground ginger in a small saucepan. Bring to a simmer over medium heat and reduce by half, until the glaze is thickened, about 10-15 minutes.
  • Glaze the Duck: Once the duck is cooked, remove from the oven and let it rest for 5 minutes. Then, brush generously with the pomegranate glaze.
  • Serve: Slice the duck and serve it garnished with pomegranate seeds and fresh herbs. Drizzle with additional glaze as desired.
