Ingredients
  

  • 1/2 cup passion fruit pulp fresh or from frozen concentrate
  • 1 tbsp granulated sugar adjust to taste
  • 1/2 cup heavy cream chilled
  • 3 tbsp sweetened condensed milk
  • 1/2 tsp vanilla extract
  • Fresh passion fruit seeds or mint for garnish, optional

Instructions
 

  • Prepare the Passion Fruit Pulp:If using fresh passion fruits, cut them in half and scoop out the pulp. To remove the seeds, press the pulp through a fine mesh strainer into a small bowl. If you prefer a more concentrated flavor, gently simmer the pulp over low heat for about 5 minutes to reduce it slightly, then allow it to cool.
  • Sweeten the Passion Fruit:In a small bowl, mix the passion fruit pulp with 1 tablespoon of sugar. Taste and adjust the sweetness as desired. Set aside.
  • Whip the Heavy Cream:In a separate bowl, use an electric hand mixer (or whisk) to whip the chilled heavy cream until soft peaks form. This will take about 3-4 minutes with a mixer or longer by hand. Be careful not to over-whip, as it could turn into butter.
  • Combine Ingredients:Gently fold the sweetened condensed milk and vanilla extract (if using) into the whipped cream until just combined. Next, slowly fold in the passion fruit pulp, ensuring everything is evenly incorporated but taking care not to deflate the cream.
  • Chill the Mousse:Spoon the mixture into two serving glasses or ramekins. Cover and refrigerate for at least 2 hours to set and allow the flavors to meld.
  • Garnish & Serve:Just before serving, garnish with fresh passion fruit seeds or a sprig of mint for added color and texture. Enjoy your tropical dessert with a loved one!
