Panna Cotta

  • 1 tbsp lemon juice
  • 1 tsp lemon zest

  • Prepare the Gelatin:In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water. Let it sit for about 5 minutes to bloom and soften.
  • Heat the Cream Mixture:In a saucepan, combine the heavy cream, milk, and granulated sugar. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture is warm but not boiling. Remove from hea
  • Add Gelatin and Vanilla:Stir the softened gelatin into the warm cream mixture until fully dissolved. Add the vanilla extract and whisk gently to combine.
  • Strain and Pour:Strain the mixture through a sieve into a bowl to remove any undissolved particles. Pour the strained mixture evenly into two ramekins or dessert cups.
  • Chill:Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Compote

  • Cook the Berries:In a small saucepan, combine the mixed berries, granulated sugar, lemon juice, and lemon zest. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 8-10 minutes.
  • Cool and Serve:Let the berry compote cool to room temperature. Once the panna cotta has set, spoon the berry compote over each dessert just before serving.
