  • 6 large sea scallops patted dry
  • 2 tbsp unsalted butter divided
  • 1 clove garlic minced
  • Juice of 1 lemon
  • 2 tbsp fresh parsley finely chopped

  • Olive Oil for searing
  • lemon wedges for serving

Instructions
 

  • Prepping the Scallops: Make sure the scallops are patted dry with paper towels. This ensures a good sear. Season them with salt and pepper on both sides.
  • Searing the Scallops: In a non-stick skillet or frying pan, heat olive oil over medium-high heat. Once hot, add the scallops and sear for about 1-2 minutes on each side or until they develop a golden-brown crust. Remove scallops from the pan and set aside.
  • Crafting the Lemon Butter Sauce: In the same pan, lower the heat to medium and add 1 tbsp of butter. Add the minced garlic and sauté until fragrant. Pour in the lemon juice and whisk in the remaining butter until the sauce is smooth and velvety. Season with salt and pepper.
  • Combining and Serving: Return the scallops to the pan, spooning the sauce over them. Let them bathe in the sauce for a minute to soak up those flavors. Sprinkle with freshly chopped parsley.
  • Presentation: Plate the scallops, ensuring each plate gets an equal amount. Drizzle any remaining sauce over the top. Serve with lemon wedges on the side.
