Ingredients
  

  • 2 cups short-grain Spanish rice
  • 1/4 cup olive oil
  • 1/2 cup onion finely chopped
  • 1/2 cup red bell pepper finely chopped
  • 1/2 cup finely chopped tomato
  • 1 clove garlic minced
  • 1/2 teaspoon saffron threads
  • 2 cups chicken brother
  • 1/2 cup dry white wine
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped chicken thighs
  • 1/2 cup chopped rabbit or substitute with chicken
  • 1/2 cup green beans, trimmed and cut into 1-inch pieces
  • 1/2 cup lima beans fresh or frozen
  • 6 jumbo shrimp peeled and deveined
  • 6 mussels scrubbed and debearded
  • 6 clams scrubbed
  • 1/4 cup chopped fresh parsley

Instructions
 

  • Heat the olive oil in a 12-inch paella pan over medium heat.
  • Add onion, red bell pepper, and tomato to the pan. Cook, stirring occasionally, for 5 minutes or until softened.
  • Stir in garlic and cook for another minute.
  • Add the rice and saffron to the pan, stirring to coat the rice with the oil and vegetables. Cook for 2-3 minutes.
  • Pour in the chicken broth, wine, paprika, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
  • Add chicken, rabbit, green beans, and lima beans to the pan, stirring gently to distribute the ingredients evenly.
  • Arrange shrimp, mussels, and clams on top of the rice. Cover and cook for 20-25 minutes or until the rice is tender, the seafood is cooked, and the clams and mussels have opened.
  • Discard any unopened mussels or clams. Sprinkle the paella with fresh parsley and serve immediately.
