Ingredients
  

  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 2 carrots peeled and sliced
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1 small eggplant cubed
  • 2 tomatoes chopped
  • 1 cup chickpeas drained and rinsed
  • 2 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt to taste
  • pepper to taste
  • 2 cups vegetable broth
  • 2 tbsp chopped fresh cilantro for garnish

Instructions
 

  • Prepare the Vegetables: Chop and slice all the vegetables as mentioned in the ingredients.
  • Heat the Oil: In a tagine or Dutch oven, heat the olive oil over medium heat.
  • Sauté Onion and Garlic: Add the onion and garlic, cooking until softened, about 5 minutes.
  • Add Vegetables and Spices: Stir in the carrots, bell pepper, zucchini, eggplant, tomatoes, chickpeas, cumin, coriander, paprika, cinnamon, salt, and pepper.
  • Add Broth: Pour in the vegetable broth and bring to a gentle simmer.
  • Cover and Cook: Cover the tagine or Dutch oven and cook on low heat for 40-45 minutes or until the vegetables are tender.
  • Garnish and Serve: Sprinkle with fresh cilantro and serve hot.
