Ingredients
  

  • 2 beets peeled and diced
  • 2 cup quinoa
  • 2 cup water
  • 2 tbsp olive oil divided
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts
  • 2 cup mixed greens such as arugula, spinach, or kale

Instructions
 

  • Roasting the BeetsPreheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.Place the diced beets on the prepared baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat evenly.Roast in the preheated oven for 30-35 minutes, or until the beets are tender and slightly caramelized. Stir halfway through cooking for even roasting.
  • Cooking the QuinoaWhile the beets are roasting, rinse the quinoa under cold water to remove any bitterness.In a medium pot, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and the quinoa is fluffy.Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
  • Preparing the DressingIn a large mixing bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, lemon juice, honey, salt, and black pepper.
  • Assembling the SaladAdd the cooked quinoa to the mixing bowl with the dressing and toss to coat.Add the roasted beets, crumbled feta cheese, chopped parsley, chopped walnuts, and mixed greens. Gently toss everything together until well combined.Serve the salad immediately, garnished with additional parsley or walnuts if desired.
