  • 2 small lobster tails
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 1 cup white whine
  • 4 cups seafood or vegetable broth
  • 1/2 cup Grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt To Taste
  • freshly ground black Pepper To Taste
  • 1 Handfull fresh oarsley chopped for garnish

Instructions
 

  • Start by bringing a medium saucepan of salted water to a boil. Add the lobster tails and cook for about 8 minutes, or until they're bright red. Once cooked, remove them and let them cool.
  • While the lobster cools, heat the olive oil in your large sauté pan over medium heat. Add the onions, letting them sweat until translucent - a soft whisper of a promise.
  • Stir in the Arborio rice, coating each grain with the olive oil, just as every moment shared coats your hearts with more love.
