- 2 boneless, skinless chicken breasts
- 2 tbsp jerk seasoning store-bought or homemade
- 1 lime juiced
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp fresh ginger grated
- 1 scallion chopped
- 1 small chili seeded and finely chopped (adjust to heat preference)
- 2 tbsp olive oil
- Salt To Taste
- Fresh cilantro or parsley for garnish (optional)
Marinate the Chicken: In a mixing bowl, combine jerk seasoning, lime juice, garlic, soy sauce, honey, ginger, scallion, chili pepper, olive oil, and salt. Mix well.
Add the chicken breasts to the marinade, ensuring they are well coated. Allow to marinate for at least 15 minutes. For best results, marinate for 2 hours or overnight in the refrigerator.
Preheat your grill or grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill.
Grill each side for 6-7 minutes or until the chicken is fully cooked through and has a nice char on the outside. A meat thermometer should read 165°F (74°C) when inserted into the thickest part of the chicken.
Once cooked, remove the chicken from the grill and let it rest for a few minutes.
Garnish with fresh cilantro or parsley if desired.
