- 2 large ripe tomatoes
- 1 ball fresh mozzarella cheese about 8 ounces
- 1 bunch fresh basil
- 1/2 cup balsamic vinegar
- 1 tbsp honey
- salt to taste
- pepper to taste
- Extra virgin olive oil for drizzling
Begin by preparing the balsamic glaze. In a small saucepan, combine the balsamic vinegar and honey. Stir well and bring to a simmer over medium heat. Allow it to cook for around 4-5 minutes or until it has reduced by half and is thick enough to coat the back of a spoon. Once done, set aside and let it cool.
While the glaze is cooling, slice the tomatoes and mozzarella cheese into 1/4 inch thick slices.
Arrange the sliced tomatoes and mozzarella on the serving plates, alternating and overlapping them for a pleasing presentation.
Tuck whole leaves of basil in between the tomato and mozzarella slices.
Once the balsamic reduction has cooled, drizzle it generously over the tomatoes, mozzarella, and basil.
Season with salt and black pepper to your taste and finish with a drizzle of good quality extra virgin olive oil.
