Ingredients
  

  • 2 salmon fillets 150g each
  • 200 g fresh asparagus spears
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fresh ginger grated
  • 2 garlic cloves minced
  • Zest and juice of one lemon
  • 2 tbsp olive oil
  • salt to taste
  • pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together the honey, soy sauce, grated ginger, garlic, lemon zest, and lemon juice to create the glaze.
  • Place a large piece of aluminum foil on a baking tray. Lay the salmon fillets and asparagus spears on the foil.
  • Drizzle the salmon and asparagus with olive oil, then season with salt and pepper.
  • Generously brush the salmon fillets with the honey glaze, ensuring every nook and cranny is coated.
  • Fold the foil over the salmon and asparagus, sealing it to create a parcel.
  • Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flaky.
  • Carefully open the foil parcel and switch the oven to broil. Broil for 2-3 minutes to get a beautiful golden crust on the salmon.
  • Remove from the oven and let it rest for a few minutes before serving.
  • Serve on plates garnished with a sprinkle of fresh parsley and a wedge of lemon on the side. Pair it with a glass of white wine for a perfect romantic dinner.
