Ingredients
  

  • 1 Small Eggplant Diced
  • 1 Small Zucchini Diced
  • 1 Yellow Squash Diced
  • 1 Small Red Bell Pepper Diced
  • 1 Small Yellow Onion Chopped
  • 2 Garlick Cloves Minced
  • 1 cup Crushed Tomatoes
  • 2 tablespoons Olive Oil
  • 1/4 teaspoon Dried Thyme
  • 1/4 teaspoon Dried Rosemary
  • 1/4 teaspoon Dried Oregano
  • 1/4 teaspoon Dried Basil
  • Salt
  • Pepper
  • Fresh Parsley For Garnish(Optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a medium-sized Dutch oven or oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook for 2-3 minutes, or until the onions are translucent.
  • Add the diced eggplant, zucchini, yellow squash, and red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  • Stir in the crushed tomatoes, thyme, rosemary, oregano, and basil. Season with salt and pepper to taste.
  • Cover the pot with a lid and transfer it to the preheated oven. Bake for 30-35 minutes, or until the vegetables are tender and the flavors have melded together.
  • Remove the ratatouille from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley, if desired.
