2 filet mignon steaks 6-ounce Salt and pepper, to taste 2 tablespoons olive oil 1 tablespoon butter unsalted 2 cloves garlic minced 1/2 cup red wine 1/2 cup beef broth 1 tablespoon fresh rosemary chopped
Preheat oven to 400°F (200°C)
Season both sides of the filet mignon steaks with salt and pepper.
In a cast-iron skillet, heat olive oil over medium-high heat.
Sear the steaks on each side for 2-3 minutes until a brown crust forms.
Transfer the skillet to the preheated oven and cook the steaks to your desired level of doneness (check with a meat thermometer).
Remove the skillet from the oven and let the steaks rest on a plate.
In the same skillet, melt the butter and sauté the minced garlic over medium heat.
Add the red wine, beef broth, and rosemary to the skillet. Bring to a simmer and cook until the sauce is reduced by half.
Serve the filet mignon with the red wine reduction drizzled on top.
