Ingredients
  

  • 2 filet mignon steaks 6-ounce
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter unsalted
  • 2 cloves garlic minced
  • 1/2 cup red wine
  • 1/2 cup beef broth
  • 1 tablespoon fresh rosemary chopped

Instructions
 

  • Preheat oven to 400°F (200°C)
  • Season both sides of the filet mignon steaks with salt and pepper.
  • In a cast-iron skillet, heat olive oil over medium-high heat.
  • Sear the steaks on each side for 2-3 minutes until a brown crust forms.
  • Transfer the skillet to the preheated oven and cook the steaks to your desired level of doneness (check with a meat thermometer).
  • Remove the skillet from the oven and let the steaks rest on a plate.
  • In the same skillet, melt the butter and sauté the minced garlic over medium heat.
  • Add the red wine, beef broth, and rosemary to the skillet. Bring to a simmer and cook until the sauce is reduced by half.
  • Serve the filet mignon with the red wine reduction drizzled on top.
