- 3 large egg yolks
- 1 tablespoon lemon juice

Begin by preparing the hollandaise sauce. In a medium saucepan, whisk together the egg yolks, lemon juice, and a tablespoon of water. Place the saucepan over low heat, whisking constantly until the mixture thickens and doubles in volume.
