Ingredients
  

  • 4 large eggs
  • 2 English muffins split
  • 4 slices Canadian bacon or ham
  • 1 cup unsalted butter melted
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 pinch cayenne pepper
  • Freshly chopped chives or parsley for garnish

Instructions
 

  • Begin by preparing the hollandaise sauce. In a medium saucepan, whisk together the egg yolks, lemon juice, and a tablespoon of water. Place the saucepan over low heat, whisking constantly until the mixture thickens and doubles in volume.
  • Slowly drizzle in the melted butter, whisking continuously until the sauce is thick and creamy. Add the salt and cayenne pepper, adjusting the seasoning to taste. Remove the saucepan from the heat and keep warm.
  • Fill a medium saucepan with water and bring to a gentle simmer. Crack each egg into a small bowl, then carefully slide them into the simmering water, one at a time. Poach the eggs for 3 to 4 minutes, or until the whites are set and the yolks are still runny. Use a slotted spoon to transfer the eggs to a plate, and keep warm.
  • Toast the English muffins until golden brown and warm the Canadian bacon or ham in a pan or in the oven.
  • To assemble the Eggs Benedict, place a slice of Canadian bacon or ham on each English muffin half. Top with a poached egg, and generously spoon the hollandaise sauce over the top. Garnish with freshly chopped chives or parsley, and serve immediately.
