Ingredients
  

  • 3 oz semi-sweet chocolate chopped
  • 1 tbsp unsalted butter
  • 1 large egg yolk
  • 1 tbsp granulated sugar
  • 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Melt the Chocolate:Begin by placing the chopped chocolate and unsalted butter in a heatproof bowl. Set the bowl over a small saucepan of simmering water, making sure the bottom of the bowl doesn't touch the water. Stir occasionally until the chocolate and butter are completely melted and smooth. Remove the bowl from the heat and let it cool slightly.
  • Prepare the Egg Yolk Mixture:In a separate mixing bowl, whisk together the egg yolk, sugar, and a pinch of salt until the mixture is pale and slightly thickened. Slowly add the melted chocolate mixture to the egg yolk mixture, stirring constantly until well combined. Set aside to cool.
  • Whip the Cream:In another bowl, pour the heavy cream and vanilla extract. Whip the cream using a whisk or electric hand mixer until soft peaks form. Be careful not to overwhip.
  • Fold the Cream into the Chocolate:Gently fold the whipped cream into the cooled chocolate mixture using a spatula. Be careful to maintain the airy texture by folding rather than stirring.
  • Chill the Mousse:Divide the mousse evenly between two serving cups or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
