For the Churros
- 1/2 cup water
- 1/2 cup all-purpose flour
- 2 tbsp unsalted butter
- 1 tbsp granulated sugar
- 1/4 tsp salt
- 1 Large egg
- 1/2 tsp vanilla extract
- Vegetable oil for frying
- 1/4 cup granulated sugar for coating
- 1/2 tsp ground cinnamon
For the Chocolate Dipping Sauce:
- 1/4 cup heavy cream
- 1/4 cup semi-sweet chocolate chips
- 1/2 tbsp unsalted butter
- 1/2 tsp vanilla extract
Prepare the Dough: In a medium saucepan, combine water, butter, 1 tbsp granulated sugar, and salt. Bring to a boil over medium heat.Reduce the heat to low, add the flour all at once, and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.Remove from heat and let it cool for 5 minutes.Add the egg and vanilla extract to the mixture, stirring until the dough is smooth and well combined.
Fry the Churros: Heat about 2 inches of vegetable oil in a deep frying pan or pot to 350°F (175°C).Transfer the dough to a piping bag fitted with a star tip.Pipe 4-inch strips of dough into the hot oil, using a pair of scissors to cut the dough from the tip.Fry the churros in batches, turning them occasionally, until they are golden brown and crispy (about 2-3 minutes per side).Use a slotted spoon or tongs to transfer the churros to a plate lined with paper towels to drain excess oil.
Coat the Churros: In a shallow dish, mix together 1/4 cup granulated sugar and ground cinnamon.Roll the warm churros in the cinnamon-sugar mixture until evenly coated.
Make the Chocolate Dipping Sauce:In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.Remove from heat and add the chocolate chips, butter, and vanilla extract.Let it sit for a minute, then whisk until the chocolate is melted and the sauce is smooth.
