- 2 Boneless, skinless chicken breasts
- Salt
- Black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup capers rinsed
- 1/4 cup fresh parsley chopped
Using a meat mallet, flatten the chicken breasts to 1/4 inch thickness. Season both sides with salt and pepper, then dredge in flour, shaking off excess.
Heat the olive oil in a skillet over medium-high heat. Add the chicken, and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside
In the same skillet, add butter, lemon juice, chicken stock, and capers. Bring the mixture to a boil, scraping any browned bits from the bottom of the pan. Let the sauce reduce for a couple of minutes until it slightly thickens.
Return the chicken to the skillet, and simmer in the sauce for another minute. Sprinkle with fresh parsley before serving.
