Ingredients
  

  • 2 medium-sized flour tortillas
  • 4 eggs whisked
  • 100 g chorizo finely chopped
  • 1/2 cup shredded cheddar cheese or cheese of your choice
  • 2 green onions finely chopped
  • 1/2 small red bell pepper diced
  • Salt To Taste
  • Pepper To Taste
  • 1 tbsp olive oil or butter

Instructions
 

  • Prep the Ingredients: Begin by chopping the chorizo, green onions, and red bell pepper. In a bowl, whisk the eggs and season with salt and pepper.
  • Cook the Chorizo: In a skillet over medium heat, cook the chopped chorizo until it's browned and crisp. Remove and set aside.
  • Scramble the Eggs: In the same skillet, add a bit of oil or butter. Pour in the whisked eggs, stirring occasionally. As they begin to set, add the green onions and red bell pepper, continuing to cook until the eggs are fully set but still moist.
  • Assemble the Quesadilla: Lay out the tortillas. On one-half of each tortilla, spread an even layer of cheese, followed by the chorizo, and finally the scrambled egg mixture. Fold the tortilla in half.
  • Cook the Quesadilla: Return the skillet to medium heat, adding a touch of oil or butter. Once hot, place the folded tortillas in the skillet, cooking until the bottom is golden brown. Flip and cook the other side until browned and the cheese has melted.
  • Serve and Enjoy: Remove from heat, and let them cool for a minute. Cut each quesadilla into wedges. Serve with salsa and sour cream if desired.
