Ingredients
  

  • 225 g white fish fillets (e.g., cod, tilapia, or halibut), cut into large chunks
  • 6 medium shrimp peeled and deveined
  • 1 lime Juice
  • Salt to taste
  • black pepper to taste
  • 1 tbsp olive oil
  • 1 small onion thinly sliced
  • 1 small bell pepper thinly sliced
  • 1 garlic clove minced
  • 1 medium tomato chopped
  • 1/2 cup coconut milk
  • 1/4 cup fish or vegetable broth
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes optional, for heat
  • 1 tbsp fresh cilantro chopped
  • Cooked rice for serving

Instructions
 

  • Marinate the Seafood: Place the fish chunks and shrimp in a mixing bowl. Squeeze the lime juice over the seafood and season with salt and black pepper. Gently toss to coat and let marinate for about 10 minutes while you prepare the other ingredients.
  • Prepare the Base: Heat the olive oil in a large skillet or shallow pot over medium heat. Add the sliced onion and bell pepper, cooking until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  • Build the Stew: Stir in the chopped tomato, paprika, and red pepper flakes (if using). Cook for 3-4 minutes until the tomatoes begin to break down and form a sauce.
  • Add the Liquids: Pour in the coconut milk and fish or vegetable broth. Stir to combine and bring the mixture to a gentle simmer.
  • Cook the Seafood: Gently add the marinated fish and shrimp to the skillet. Cover and cook for 5-7 minutes, or until the fish is opaque and the shrimp are pink and cooked through.
  • Finish and Serve: Stir in the chopped cilantro and adjust seasoning with salt and pepper if needed. Serve the Moqueca hot, garnished with extra cilantro, alongside a serving of cooked rice.
