- 2 white fish fillets (cod, haddock, or tilapia)
- 2 tbsp blackening spice
- 1 tbsp olive oil
For the mango salsa
- 1 ripe mango diced
- 1/2 red onion finely chopped
- 1 jalapeno finely chopped
- juice of 1 lime
- 1 handful fresh cilantro chopped

Start by preparing the mango salsa. In a bowl, combine the diced mango, chopped onion, jalapeno, lime juice, and cilantro. Mix well and set aside to let the flavors meld together.
Pat the fish fillets dry and rub them with the blackening spice.
Heat the olive oil in a non-stick skillet over medium-high heat. Once the oil is hot, add the fish fillets and cook for about 3-4 minutes on each side, until the fish is cooked through and the exterior is nicely blackened.
Warm the tortillas in the oven or on a skillet.
To assemble the tacos, spread a little sour cream on each tortilla, top with a piece of the blackened fish, and then a generous spoonful of the mango salsa. Serve immediately.
