Ingredients
  

  • 2 white fish fillets (cod, haddock, or tilapia)
  • 2 tbsp blackening spice
  • 1 tbsp olive oil

For the mango salsa

  • 1 ripe mango diced
  • 1/2 red onion finely chopped
  • 1 jalapeno finely chopped
  • juice of 1 lime
  • 1 handful fresh cilantro chopped

  • 4 small tortillas
  • sour cream for serving

Instructions
 

  • Start by preparing the mango salsa. In a bowl, combine the diced mango, chopped onion, jalapeno, lime juice, and cilantro. Mix well and set aside to let the flavors meld together.
  • Pat the fish fillets dry and rub them with the blackening spice.
  • Heat the olive oil in a non-stick skillet over medium-high heat. Once the oil is hot, add the fish fillets and cook for about 3-4 minutes on each side, until the fish is cooked through and the exterior is nicely blackened.
  • Warm the tortillas in the oven or on a skillet.
  • To assemble the tacos, spread a little sour cream on each tortilla, top with a piece of the blackened fish, and then a generous spoonful of the mango salsa. Serve immediately.
