Ingredients
  

  • 200 g Pasta of choice spaghetti or fettuccine
  • 2 cup Fresh basil leaves
  • 2 Garlic cloves
  • 1/4 cup Pine nuts
  • 1/2 cup Extra-virgin olive oil
  • 1/2 cup Grated Parmesan cheese
  • 1/2 cup Sun-dried tomatoes chopped
  • salt
  • pepper
  • 1/4 tsp Red pepper flakes optional

Instructions
 

Pesto Preparation

  • In a blender or food processor, combine basil leaves, garlic, pine nuts, and a pinch of salt. Blend until coarsely chopped.
  • Gradually add olive oil while blending until smooth.
  • Stir in the Parmesan cheese by hand for a better texture. Set aside.

Cooking the Pasta

  • In a large pot, bring water to a boil. Add a pinch of salt and the pasta.
  • Cook according to package instructions until al dente.
  • Reserve 1/4 cup of pasta water and then drain the pasta.

Combining Ingredients

  • In a skillet, warm the sun-dried tomatoes over medium heat for 2-3 minutes.
  • Add the cooked pasta, pesto, and a bit of the reserved pasta water to achieve your desired consistency.
  • Toss everything together gently, ensuring the pasta is well coated with pesto.

Final Touches

  • Season with salt, pepper, and red pepper flakes if using.
  • Serve warm, garnished with additional Parmesan cheese if desired.
