Ingredients
  

For the Baked Sweet Potatoes:

  • 2 medium sweet potatoes washed and pierced
  • 1 tbsp olive oil
  • salt
  • pepper

For the Turkey Chili:

  • 1 tbsp olive oil
  • 1/2 pound ground turkey
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes undrained
  • 1 can tomato sauce
  • 1 tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • salt
  • pepper
  • 1 can kidney beans drained and rinsed

Instructions
 

  • Preheat Oven and Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Rub the sweet potatoes with olive oil and season with salt and pepper. Place them on a baking sheet lined with aluminum foil.
  • Bake Sweet Potatoes: Bake the sweet potatoes for 45 minutes or until tender.
  • Cook Turkey Chili: While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned.
  • Add Aromatics: Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  • Combine Chili Ingredients: Add diced tomatoes, tomato sauce, chili powder, ground cumin, and paprika to the skillet. Season with salt and pepper.
  • Simmer: Let the chili simmer for about 20 minutes, stirring occasionally. Add the kidney beans and cook for an additional 5 minutes.
  • Assemble and Serve: Once the sweet potatoes are done, slit them open and fluff the insides with a fork. Spoon the turkey chili over the sweet potatoes and serve.
