Ingredients
  

  • 2 cod fillets
  • 2 lemons one for zesting and juicing, one for slices
  • 2 tbsp olive oil Extra Virgin
  • 4 springs Fresh Dill
  • Salt To taste
  • Pepper To taste

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • As the oven preheats, pat the cod fillets dry and season them with salt and pepper.
  • In a small bowl, mix the juice and zest of one lemon with the olive oil.
  • Lay the lemon slices at the bottom of the baking dish, placing the cod on top. Pour the lemon and olive oil mixture over the cod fillets.
  • Top each fillet with sprigs of dill and cover the baking dish with aluminum foil.
  • Bake the cod for 10-15 minutes, or until the fish flakes easily with a fork.
  • Serve immediately, spooning the lemon and olive oil sauce from the dish over the cod before serving.
